pete and i made friands a couple of weeks ago.
pete doesn't like lemon as a flavouring for dessert products so we added vanilla instead of lemon rind. and i was a little disappointed with the superfine texture of the commercial almond meal, so if you have access to a food processor, you might want to grind the almonds yourself.
* 50g (1/3C) plain flour
* 160g (1C) icing sugar mixture
* 110g (2/3C) ground almonds
* 3t finely grated lemon rind
* 4 egg whites (lightly beaten)
* 120g unsalted butter (melted)
sift flour and icing sugar
stir in ground almonds
add lemon rind, eggwhites and butter
stir until smooth
add to greased muffin / friand pans
bake at 210°c for 8 minutes and for a further 5 minutes at 200°c.
stand for 5 minutes
turn onto a wire rack, cool and eat.
