* some feta. [preferably bulgarian]
* olive oil
* fresh crushed garlic
* dried or fresh oregano and thyme
* pepper
* lemon juice
cut the feta into half-inch cubes
add in lemon juice, garlic, pepper, herbs and olive oil until it tastes good.
mix it up.
keep it in the fridge, but this tastes really nice once it's warmed up a bit.
have it on toast, on a pizza, in a sandwich or in a salad.
if you plan on kissing someone after eating this, you might want to entice them with some feta on toast. not only will they be garlic too, but the thoughtful gift of tasty toast will make them love you even more...

I made this yesterday as part of kind of an antipasto dinner. Even though I left the olive oil out (because there was plenty of that in a dip I also made), it was absolutely delicious. Regardless that I used Greek goat and sheep milk feta instead of the recommended Bulgarian.
