apple cake

• 1 cup flour
• 1 t bicarbonate soda
• 1/2t nutmeg
• 1 egg
• 1T lemon juice
• 1/2 cup raisins
• 3/4 cup sugar
• 1t salt
• 2 cups chopped apple
• 1/2 cup chopped nuts
• 1 cup vegetable oil
  
  sift the dry ingredients into a bowl.
  add oil and egg.
  mix well.
  stir in apple, lemon juice, chopped nuts and raisins.
  spread the thick mix over a 20 x20 cm pan.
  bake in a moderate oven for 40 minutes

this cake is really excellent served hot with vanilla ice cream.
