these chocolate chip cookies could almost be solid chocolate, but one thing that makes them taste a bit different is that i'm not that stingy with salt in the recipe. i've been using salt with fairly large grains so there's a contrasting taste to the sweetness of the chocolate.
when buying the chocolate stay away from the specific choc chips because they're usually owned by nestle and also because they're designed to stay in the drop shape when they are cooking. use white (melting) chocolate buttons and chop them up or food process them until they're all different sizes. this means that they'll melt into the cookie to make it really rich.
mix flour, cocoa, soda and salt.
cream butter and sugars until light and fluffy.
add egg and vanilla and beat well.
stir in dry ingredients and choc bits.
drop teaspoons of mixture onto greased baking trays - leave room for spreading.
bake in a preheated oven (180c) oven for ten minutes.
cool, eat and enjoy
